The harvest is set for the latest possible date and all of the grapes are then destemmed. Most of the wines are matured in oak casks. The outcome of the Schrammel family's focus on quality is wines that are typical for their region and variety with particular fruity charm, pleasant acidity structure, always matured dry but nethertheless not too high in alcohol.
