After the harvest the grapes are crushed, sulphurized and pressed immediately with a spindle press. The must, which is not racked, is then fermented in wooden casks (without the addition of selected yeast) at the lowest possible temperatures. The wines are also stored entirely in wooden casks during the ageing process.
