After the harvest the grapes intended for the production of white wines are destemmed, lightly sulphurized and only rarely left on the must for a while before being pressed. The red wines, which are fermented in closed Roto steel tanks, are ripened traditionally in large wooden casks after the malolactic fermentation has been completed.
